Breakfast

Mmmm, pancakes. I really should make them more often! I had a bit of a 'headache' this morning from the sangria last night. Pancakes help you feel better when that happens!

Pancakes from The Joy of Cooking

Blend in a bowl:
1 1/2 cups flour
3 TB sugar
1 1/2 tsp baking powder
1/2 tsp salt

In another bowl, whip:
1 1/2 cups milk
3 TB melted, unsalted butter
2 eggs
1 tsp vanilla, optional

Add the wet ingredients to the dry. Fold together until blended. Some lumps are ok.

Lightly oil a large skillet set over medium heat. Ladle approximately 1/2 cup of batter onto the skillet or griddle. When bubbles start to appear, carefully flip the pancakes and allow to finish cooking, about one minute.

Serve with fruit, syrup, butter, whatever you like!

Makes approximately 12 5-inch pancakes.

If you are serving several people, you can keep the pancakes warm in a 200 degree oven.

PS: I like my pancakes to be a little darker than most folks, not burnt, but dark. They almost get a little crisp around the edge! YUM.

I had pancakes yesterday, too, from a local diner. My friend, James, is a pancake expert and he said while the pancakes we had were good - they needed to be flatter and more dense... I dunno the fluffy kind tasted good to me! And I DEFINITELY don't enjoy crepe-like pancakes (those are crap).

Did you tell me about using olive oil in the pan when cooking pancakes, or did I get that from someone else? It makes them crispier. So good.

Not me. I sometimes use crisco...my grandma used to do that for crispy pancakes. I did use Olive Oil in the potato pancakes and they were crispy and super tasty. Good for the hair!
