CCC: Chicken Coconut Curry

Help, I've eaten too much!! This was sooo good. I didn't have exact amounts of potatoes or chicken, so I adjusted the recipe as best I good. I still used the same amount, if not more, of curry and red pepper flakes as the recipe called for, tho... and a bit more coconut milk. I don't care for fresh or frozen beans, so I tried chunks of green pepper instead and it was FABULOUS!! I served it with Tandoori Naan bread... no, I didn't make it myself! I can only hope to have a kitchen big enough to house a Tandoori in the corner!! HA! It was something our local Target actually carried. I heated it on a grill pan intil it was hot and a bit crisp. YUM!! I'll be making this again!

Lord Brandenburg made it last night! (Monday 6.5) YUM. He followed the recipe exactly - I liked that the sauce was not overwhelming - we could still taste the fresh green beans through the sauce. My brother came over for a little while and he sampled some and was really impressed. Great recipe. Thank you!!! We are going to eat leftovers tonight - I have a feeling that it will taste good the next day. :)
