Cornbread is one of those things that I can never get right. Mine is always too crumbly, too dry, and just not like my gram's. The only time I get decent cornbread is when I use a box mix, but where's the glory in that?
How do you make yours? It's so pretty and perfect looking.

Don't over mix and let the batter sit for a few minutes before you put in the oven. If you want, drizzle a little melted butter on top or honey. Last night I used a little butter. I also pour the batter in the small cast iron skillet that sat over high heat for a minute, until it's very hot.

What size is that? It's hard to tell from the picture, as beautiful as it is.
Size doesn't really matter does it?
But if you must know, it's the small skillet, about 6 inches across.

The little blue Jiffy box is heaven. That's what my mom made growing up, both the corn muffins and the blueberry muffins. LOVE.
