Tomato Soup
Serves 2-4
1 TB olive oil
1 medium onion, diced
3 garlic cloves, finely minced
1/2 tsp red pepper flakes (or to taste)
1 tsp salt (or to taste) & pepper
1 tsp fresh thyme
1 tsp dried basil
1 bay leaf
1 14 oz can of tomato sauce
1 14 oz can of diced tomatoes
1/4 cup heavy cream
1 TB butter
In a medium saucepan, heat the olive oil over medium heat. Add the onions. Sweat the onions for about 5 minutes, stirring every little bit. Add the garlic. Stir to incorporate. Add the red pepper flakes, salt, pepper, thyme, basil, bay leaf. Stir. Give the herbs a minute to heat up in the oil and onions. Add the tomatoes. Turn the heat to low. Cover and simmer for 30 minutes.
Taste the tomatoes. Adjust seasoning.
Pull out your food processor and whiz the soup until it is soupy and smooth-ish. Stir the cream and butter into the soup. Cover and let simmer over the lowest heat until you are ready to serve.
Serve and Enjoy.

This was a very satisfying bowl of soup...I kind of wish I had made more! Maybe next time I'll make more.
