Such a Ham

Christmas Dinner

Guess now is good a time as any to start catching up with my posts. This is our Christmas Dinner. I did the Cola & Cherry Preserve Glazed Ham. I served with some cheese slices and soft rolls. That's it. It was delicious. We just kept noshing while playing board games. Ham served/cooked any other way just isn't as delicious. Oh, one differences. The recipe calls for some OJ. Didn't have any, but we did have Pineapple Juice. Of course it was wonderful, as the way I used to make ham was with pineapple slices, cloves and cherries. This is a more delicious, fancy, yet simpler version of that old school classic!

Using up some Easter Ham

I wanted something easy to use up some of the extra Easter ham. So I made a "hash."

This is three small potatoes, cut into cubes and fried in a tablespoon of olive oil until tender and crispy. Season with salt/pepper, and any other spice or seasoning you like.

Add about 2 cups cubed ham, 1/2 of a diced green pepper and 1/2 of a small, diced onion. Saute until the ham is warmed thru and starting to caramelize and the veggies are just approaching soft.

Top with fried eggs.

Gooey and yummy. Breakfast for dinner!

Haming It Up 4 Easter

Here are some photos from our Easter Dinner.


I made a Caramelized Onion Marmalade to accompany the ham. It's very tasty and simple to make. The onions start like this and end up looking like a little pot of jam.


Here's my finished ham. I like calling this my Cherry Coke Ham. The first half of the cooking is done in cola. The second half of the cooking happens with a Cherry-Orange Juice glaze. Very tasty. I couldn't stop eating the ham. It was my Easter Crack!


To pair with the ham I have my Rosemary Parmesan Au Gratin Potatoes. Rich & delicious. Perfect.

With all the rich foods, we needed something light, crisp and with enough clear flavors to cut the fat of the ham and cream of the potatoes. The Orange Fennel Salad does the trick.


And of course we had some lovely flowers from the garden. They certainly brightened up the room and offered up some lovely fragrance. Check them out here.

Baked "ham" and potatoes

I wanted ham today...good ham...sadly Giant didn't have good ham, so I bought a Turkey "Ham" Loaf...not bad, but I'd have preferred the real deal. I threw it in the oven for awhile, made some carmelized onion marmalade for it and some potato 'hash' as a side.


The Potato Hash wasn't too bad. One large sweet potato cut into large cubes. Two small white potatoes cut into large cubes. Some olive oil in a large pan. Season with salt and pepper. Later add a teaspoon of cajun seasoning, hot sauce (to taste) and a TB of butter. Saute until tender. Oh, and about a teaspoon of dried oregano. Good. Filling. Make sure to use plenty of salt, taters need it.
