Wrap for Dinner

We were craving a quick, light dinner the other evening, but also something with a high, zesty flavor profile. Oh, and totally satisfying. I think we did pretty good by going back to a previous recipe.

Start with a quality wrap or tortilla that you like. These were sun-dried tomato and basil. Good flavor components with what we were looking to accomplish. Add some mixed greens of your choice.

Here's the one area I really wanted to play around. I used some shredded mozzarella. I did the same the last time I made these. I really want to try some feta, but I'm a little gun-shy with feta. For me, there is a fine line between enough to taste and too much that I can't eat it. Oh, and I don't really want to buy feta from my cheap-0 grocery store. I just don't trust it. Well, one of these days I'll get up the nerve and try..

Previously & Meanwhile, marinate some chicken with olive oil, lemon, oregano, garlic, salt & pepper. Saute or grill until cooked through. Dice. You can use boneless, skinless chicken breasts for ease. I used some chicken thighs for flavor. Very tasty. Saute or grill some peppers, shallots and tomatoes as well. Toss with chicken and some reserved marinade. If you have some toasted pine nuts, add those. Pile on the mixed greens and wrap up.

Enjoy!

Grab Bag

I have some catching up to do. Last week was busy. Tuesday was bookclub, so dinner was at 2 Amy's in the Cleveland Park neighborhood of Washington, DC. Great pizza and delicious fried risotto balls. Wednesday I had a staff retreat to attend. Wednesday night I had to prep food for my departments two day staff retreat. Thursday night I got home way late and was exhausted. Friday, same thing, home later than normal and just darned pooped out. Saturday we had a nice dinner at home and Sunday we spent in Baltimore at Honfest. This week should be a little more normal....???? Fingers-crossed.

The full staff retreat included a pot-luck component for lunch, I brought a pineapple & kiwi fruit salad, with ginger-lime syrup. This is super fun, easy and very tasty. Make a simple syrup of water and sugar. Put a few chunks of peeled, smashed ginger root into the syrup while it simmers and the sugar dissolves. When it cools down, add some lime zest and lime juice. Pour over the fruit. The tropical flavors all blend together beautifully for a refreshing dessert.

I think this with Saturday night's dinner. It looks pretty rough, but was fairly tasty. This is a play on the Tequila Turkey Fettucine. I used leftover chicken and pork roast instead of turkey and rum instead of tequila. It was tasty. I'm not going to go out of my way to make it again, but as a leftover dinner, it worked!

When I prepped last weeks menu, there was one special request. Chicken Picatta. I was pleased with the final outcome. First, I only make this with angel hair now. The lemony-buttery sauce seems to play best with the thin pasta. Also, I used shallots instead of garlic. No reason, but I loved the more mild flavor of the shallot. And I went a step further with the chicken. Normally, I just coat the thin chicken breasts with seasoned flour, then fry them. I wanted a more substantial coating this time, so I did the flour/egg/flour combo and received high marks! Good times. I had a few extra chicken breasts and turned one into a delicious sandwich for lunch. Great!

Lemon Cream

Made this last night. Not much to look at, but tasty. Not heavy, as you would expect from a cream sauce, but pretty light. The lemon really cuts through all that fat. The herbal accents are accented by the lemon. We did half the recipe for the two of us. Just enough. We each had a bowl, then another few bites of the remaining. Perfectly full.

Chicken in Lemon Cream with Penne from Giada de Laurentiis
Servings: 4 to 6

1 pound penne pasta
3 tablespoons extra-virgin olive oil
2 boneless skinless chicken breast halves, diced in to 1-inch cubes
1 teaspoon Herbs de Provence
pinch of salt, plus 1/2 teaspoon
pinch of freshly ground black pepper, plus 1/4 teaspoon
1 cup reduced-sodium chicken broth
2 cups heavy cream
Zest of 1 lemon
pinch of cayenne pepper
1/4 cup fresh flat-leaf parsley
1 tablespoon freshly squeezed lemon juice

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain.

Meanwhile, heat the oil in a large, heavy skillet over medium-high heat. Season the cubed chicken breast with the Herbs de Provence and a pinch of salt and pepper. Cook the chicken until golden brown, about 5 minutes. Using a slotted spoon, remove the chicken and set aside. Pour off any excess oil from the pan. Add the chicken broth to the pan and cook over medium-high heat, using a wooden spoon to scrape the brown bits off the bottom of the pan. Add the cream, lemon zest, and cayenne. Reduce the heat to medium low and simmer for about 10 minutes.

Add the pasta, chicken, 1/2 teaspoon salt, 1/4 teaspoon pepper, chopped parsley, and lemon juice. Toss to coat the pasta and chicken with the sauce and serve.
