
Ground beef, drain the fat. Add carrots...

...onions and garlic. Some herbs and spices...

Then Guinness, red wine and beef broth. Simmer and thicken.

Top with Champ...Mashed Potatoes with Green onions, chives or kale and white cheddar cheese.

Toss under the broiler until bubbly and golden brown and OMG So Delicious!

Really was good, and very filling, along with the beer and the bread. I am still kicking myself for forgetting to make the Irish Coffee for after dinner. Instead I got caught up in Bourbon and Diet Cokes.
I wonder why it is that the "peasant dishes" of old are some of the most delicious? I guess if you don't have it several days a month, it seems more special.
Me, I could eat this once a week and be happy as a clam.
