Must have a salad...


Chicken, Apple and Fennel Salad. I'm stuffed! Sweet apple and fennel. Tender chicken. Crisp lettuce. And crunchy, salty cashews. Very satisfying.

    So satisfying and a refreshing change. I'm thinking of it as a sign of spring.

    (I'm seeing a lot of things as a sign of spring out of desperation.)
